The anniversary edition serves as a celebration of the restaurant’s first year and a showcase of its evolving identity, where French technique meets Southeast Asian inspiration.
The event runs from 6 PM to 10:30 PM, offering guests a chance to experience limited-time creations from a collaboration between Chef Chris Beverley, Colette’s executive chef, and Chef Chet Adkins of JUA Bangkok. Their menu will include JUA favorites like Chicken Katsu Sando—a crispy, breaded chicken cutlet sandwiched in fluffy shokupan—and Uni Pasta, a delicate sea urchin dish paired with handmade pasta, alongside new Colette dishes such as Salmon & Lobster Ravioli and Bouillabaisse, a fragrant Provençal fish stew. The pairing reflects Adkins’ background in Japanese and Western cuisine with Beverley’s French bistro approach.
